Raw vegetable diet? What's that? What's the purpose?

This article will explain the health benefits of including raw vegetables in your diet.

First, raw vegetables simply refer to vegetables that are uncooked or only slightly heated, as in quick steaming. The reason and purpose for eating vegetables this way is to retain their nutritional value, which is destroyed by heat. So if someone tells you "Eat more vegetables, they're good for you" - you can rest assured that those mushy cooked peas don't count!
